Named after the hour
Great work happens at a certain frequency. It is the frequency where the city has gone quiet, the office lights have gone home, and the noodles have not. The studio is named after what is still open at that hour, and after the shape the sound wave makes when you look at it too long: an M on the crest, a W in the reflection underneath. Midnight. Wonton. Nobody planned that. Everybody kept it.
The rest of the name is a bowl of wantan mee, which is the correct food for this hour and we will take questions later. Springy egg noodles that bounce back, the way a good idea does after the first round of feedback. Soup on the side, because some things should never touch the main dish. And the wonton itself: a small parcel of something good, wrapped carefully, handed over while it is still warm. That is not a dumpling metaphor. That is the entire business model.
We spell it wonton because that is the gwailo version, and because the domain was available. Both reasons are true. Only one of them is romantic.
